Ingredients:

For boiling Chickpeas:

  • 1 cup (250gm) Kabuli Chana (chickpeas), soaked overnight
  • Salt to taste

For Cooking:

  • Oil for cooking
  • 2 teaspoons Ginger Garlic Paste
  • 2 medium Onions, finely chopped
  • 2 medium Tomatoes, finely chopped
  • 1 Green Chili. Finely chopped
  • 1 pinch Cumin seeds
  • 3-4 tablespoons Phulo Phalo’s Pindi Chole Masala [Link Product Page]
  • Red Chilli Powder, to taste
  • Salt to taste
  • Fresh Coriander, finely chopped, for garnish
  • 2 tablespoons Ghee, for tempering (optional)

Instructions:

  1. Soak the Kabuli Chana (chickpeas) overnight or for a minimum of 8 hours
  2. Pressure cook or boil the soaked chickpeas with salt until tender. Set aside after finishing.
  3. In a pan, heat oil and add cumin seeds. Let them sizzle.
  4. Add ginger-garlic paste and green chilli. Sauté for a few more minutes until the raw aroma disappears.
  5. Add chopped onions. Sauté until golden brown.
  6. Add chopped tomatoes and cook until they become soft and mushy.
  7. Add our Pindi Chole Masala. Add red chilli powder and salt to taste. Mix well and cook for a few minutes until the oil separates from the masala.
  8. Add the cooked chickpeas with the water to the masala, and stir well. Adjust the consistency to your liking by adding warm water. Cook for another 10-15 minutes on low heat, stirring occasionally.
  9. Garnish with fresh coriander leaves and serve hot.

Extra Step: For that restaurant/dhaba style taste, top it with 2 tablespoons of piping hot Ghee before serving.
